Suffolk University and Sodexo have worked together to adopt the use of environmentally preferred products, expand and increase recycling, and offer waste reduction incentives.
Prompted by student advocacy, Suffolk worked with Sodexo to replace polystyrene products with plates, cups, and bowls made of paper, with recycled content.
Since starting an organics recycling program for biodegradables and organic waste such as lettuce heads and banana peels, the Sodexo staff in the Sargent Kitchen have recycled more than 10,000 pounds.
The organics recycling program expanded to two more kitchens in the fall of 2008: Donahue and 150 Tremont.
Staff in each of the kitchens recycle cardboard, glass, metal, and plastic.
